Description and application:
Propionic acid (from the Greek “protos” — the first,” pion ” — fat;) is so named because it is the smallest H (CH2)nCOOH acid that exhibits the properties of fatty acids. It refers to short-chain (volatile) fatty acids.
It is soluble in water, alcohol, and ether. The smell is specific. It is used in perfume compositions, as well as in cosmetics as an antioxidant and preservative. Propionic acid salts (e.g., sodium propionate) can be used as an antifungal agent.
