Description and application:

Guar gum is extracted from the ground endosperm of the guar plant. The plant is cultivated in India and Pakistan for human consumption. The beans are about 15 cm long and contain six to nine seeds with a diameter of 2-3 mm. The seeds contain up to 70% gum (the highest polysaccharide-galactomannan).

The substance has sufficient rigidity and increased elasticity, it is well soluble in water. Due to these properties, it is recognized as a very effective emulsifier and stabilizer.

In ethyl alcohol and glycerin, the component is dissolved in the production of pharmaceuticals.

Applicable:

  • in the food industry as a consistency stabilizer, thickener, binding agent in jams, marmalades, cheeses, fermented milk and other products.
  • in the production of cosmetics, as a thickener of the water phase of creams, improving the stability and properties of the product; thickener of shampoos and shower gels, gels for intimate hygiene, etc.; additive to reduce transepidermal water loss by the skin.
